My Recipe For Instant Mango Peda

To all my Indian sweets lovers, this is your chance to rise & shine and make the easiest, tastiest and pretty (easy) Indian sweet!

To all those who don’t know, Peda is usually made up of milk solids heated with sugar to form a doughy texture. It is flavored with various things including mango pulp in this case. BUT BUT, guess what? This recipe has no milk or milk solids! It can be made into a dairy free dessert too! Check out the recipe below to know more 😁

Ingredients

Cashew-nut powder – 2 cups

Powdered lump sugar – 3/4 cup (can use regular granulated sugar but do not use icing sugar)

Mango Pulp – 1 to 2 spoonful

Ghee (clarified butter) – 1 spoon (can be omitted or replaced with vegan butter)

Cardamom powder – a pinch (optional)

Saffron – a pinch (optional)

Recipe

– Using a mortar and pestle, crush the saffron with a drop or 2 of water to release its flavor and color.

– In a deep bowl, add most but not all of the cashew powder.

– Add half of the powdered sugar along with the cardamom powder and saffron if using.

– Add a little bit of ghee if using and make a slightly crumbly dough by mixing well.

– Add in the mango pulp at intervals and keep mixing to make a firm dough consistency.

– You can add more cashew powder or powdered sugar to adjust the consistency.

– Finally add a little ghee and make the dough into a play-doh consistency.

– Roll it into small balls and flatten them to form a Peda.
