Delicious and versatile, pasta is one dish that a lot of people love; making and eating it. It’s well known that pasta have a lot of varieties. From basics like penne and spaghetti to more complex ones like gnocchi and ravioli!
Ravioli is a type of enveloped pasta filled with different fillings and covered with a thin. We shall be checking out a spinach and ricotta cheese filled ravioli in this recipe.
Ingredients
For Pasta
All purpose flour – 1 cup
Fine Semolina – 1 cup
Water – 200-250 ml
Salt (optional) – to taste
Olive oil – 2 tablespoons
For Filling
Ricotta cheese – 1/2 cup
Spinach (washed and chopped) – 2 cups
Salt & Pepper – to taste
Oregano – to taste
Miscellaneous
Flour (for dusting) – as required
Milk (for brushing) – as required
Salt – as required
Recipe
– Blanch the washed and chopped spinach in hot water for a few minutes and add them to ice cold water right after. Strain and remove access water and set aside.
– In a bowl or on a clean kitchen platform, mix the flour and semolina.
– Incorporate water at intervals and mix well to form a firm dough. Make sure that the semolina absorbs water well. This will make the dough less coarse.
– Once the dough it firm and not too soft, add all the oil and knead the dough. The dough will be silky and stretchy.
– Place this dough in a bowl and cover it with a damp cloth. Let it rest for 45 minutes.
– Meanwhile, take a bowl and add the spinach and ricotta cheese to it.
– Mash them together. Add the seasoning as per taste and mix well. Keep aside.
– Put a large pot filled with water on medium-high heat and bring the water to boil.
– Take the rested dough on a well dusted platform and roll to a 2mm thickness. (Use a pasta roller of available)
– Cut in desired shapes using cookies cutters (square,circle etc)
– Place a small amount of filling on one of the pasta sheet and place another one on top of it. Brush the edges with milk. Using a fork, pinch the edges to enclose the sides.
– Do this to all the pasta and until all the filling is over. Any leftover dough can be cut into any shape and boiled as it for delicious plain pasta!
– Once the water in the pot has boiled, add a pinch or 2 of salt to aggravate and flavor the water.
– Add 4-6 raviolis one after the other and let them boil for 5-7 minutes. It is cooked when the pasta becomes translucent and starts floating on the top of the pot.
– Remove them on a plate and let them cool down a bit. Add them to your desired sauce and enjoy this delicious ravioli!
